This is a recipe I love to make in the fall. Apple-Raisin Pork Chops. We had it again last night with baked sweet potatoes and asparagus.
Recipe:
Cook 2 red apples and 1/2 cup raisins in 2 t olive oil for 5 minutes. Add 1/4 cup of apple cider. When most of the liquid has absorbed add another 1/2 cup apple cider (or Marsala wine) and cook 15 minutes until thickened. Set Aside. Then cook pork chops, seasoned with rosemary, salt and pepper in the skillet in some olive oil over med-high heat for 5 min on each side or until done. Top with apple mixture. Yum!

uh, that apple pie is what i dream of. more like a 'scoop it' than a 'slice it', right? mouth watering... yum yum.
and im totally taking that chop recipe!
